  • 1 Medium Cucumber
  • 4 Slices Tuscan Bread
  • 1-2 Tablespoons Olive Oil
  • 2 Tablespoons Mayonnaise
  • Sea Salt to Taste

This sandwich is so simple that its flavor is easily underestimated. Just today I offered my husband a little bite. He claimed he wasn’t hungry, but before he finished chewing that bite he had snatched the entire sandwich off my plate and in two more bites it was gone. It really is that good.  

To make, brush olive oil over both sides of the bread and quickly grill over high heat being careful not to burn the bread. I used garlic infused olive oil, which was wonderful, but plain olive oil would be fine too. Use a vegetable peeler to make cucumber ribbons. I tried my best to get narrow band of skin and stopped once I started hitting seeds. Toss the cucumber ribbons in a little sea salt. Spread mayonnaise over grilled bread and top with cucumber ribbons. Enjoy your sandwich before somebody else does.
