  • 2 soft shell crabs
  • 2 kaiser rolls
  • 1 tablespoon garlic scape pesto
  • 3 tablespoons goat cheese (softened)
  • 2 cups baby arugula
  • juice of 1 lemon
  • 2 tablespoons wondra flour
  • 1 tablespoons grapeseed oil
  • 2 tablespoons balsamic vinegar for dipping
  • salt and pepper to taste

This soft shell crab is very rich and flavorful. I dipped my sandwich in a bit of nice balsamic vinegar but you could also drizzle some over the arugula. Pair with a kaiser roll from blue duck bakery and glass of local white wine and dinner is served.

Season the soft shell crab with salt and pepper and then coat with wondra flour. Heat grapeseed oil and pan saute crabs over medium heat until they are golden. This usually takes about 2 minutes on each side. Remove from pan and allow to sit on paper towels while you prepare the sandwich. Spread garlic scape pesto over kaiser rolls. Soften goat cheese in microwave for 10 seconds and spread it over kaiser rolls. Make a nest with the arugula and top with soft shell crab and a squeeze of lemon. Enjoy.
