Strawberry Rhubarb Compote

- 2 cups fresh strawberries (hulled and sliced)
- 2 cups rhubarb (cut into 1 inch pieces)
- 1/3 cup sugar
- juice of 2 lemons
- pinch of salt
Strawberries and rhubarb are a classic combination. This compote is delicious on English muffins or scones or with pancakes and French toast.

To make simply combine 1 cup of strawberries and all of the other ingredients in a sauté pan and cook over medium heat for 10 minutes. Next add the remaining strawberries and cook an additional 5 minutes.
